Made baked mac and cheese today :]. It turned out better than my previous (second) time cooking it, where the sauce was a bit lumpy. It's one of the few things I both enjoy eating and can consistently make from scratch.

I liked cooking when I was younger and when I was first learning it at school (food and nutrition being one of the few subjects I didn't dislike) but its gotten boring for me cus you mostly use same techniques for everything.

When I did like it, I liked making Victoria Sponges, Chocolate Profiteroles, Cinnamon Rolls, Quiches and a salad which I called the "Rainbow Pasta Salad" (it had different fruit and veg, each representing a color of the rainbow.)

That looks good. I have an app called paprika and you can use it to save recipes you find online e. Then I attempt to make them, some times it is bad other times it is good

if baking counts: i love to make tres leches. i make them for special occasions and birthdays, including my own. its my favorite cake- easy, light, not too sweet and super customizable.

the best way is with a nice thick sponge cake, suspiro frosting (aka italian meringue), lots of milk and fresh strawberries sliced on top.

I love hearty meals and enjoy making them but I live alone and lost the motivation to make them for myself when I can make do with simple foods. And the best recipes often require you to spend a small fortune on ingredients so sometimes I swap out meat to cut costs, e.g. mushrooms (€5/kg) instead of chicken (€13/kg).

My favorite and somewhat budget-friendly recipe is the "chicken and bell pepper in sweet chili sauce" (4 portions).
  • 240g Brown Basmati rice
  • 300g Chicken thighs
  • 300g Canned pineapple slices in juice (net weight)
  • 400g Canned tomato cubes
  • 70g Tomato paste (optional)
  • 100ml Sweet chili sauce
  • 1 Bay leaf (optional)
  • 3 Bell peppers
  • 1 Onion
  • 1 tsp. Vinegar
  • 1 tsp. Paprika powder
  • ½ tsp Chili flakes
  1. Drain the pineapple thoroughly and slice into pieces. Save 50 ml pineapple juice. Optional: bake the pineapple pieces over medium heat until the pineapple is dry and all juice has evaporated, usually 15 minutes. Occasionally stir the pineapple to prevent burning.
  2. Slice and dice the chicken, bell peppers and onion.
  3. Heat the oil in a snack pan and fry the chicken with spices (paprika powder and chili flakes), onion and bell pepper over medium heat for 5 minutes.
  4. Add the tomato cubes, tomato paste, sweet chili sauce, vinegar, pineapple cubes and pineapple juice and let it simmer over low heat for about 8 minutes.
  5. Optional: add a bay leaf and let it simmer over low heat for 90 minutes. Stir every 15 minutes to prevent burning the sauce.
  6. Serve with rice.
